ECHO AfterDark is what grown ups do when they go out on the town in Burlington, Vermont.

At ECHO AfterDark we mix up the perfect cocktail for the intellectually adventurous: one part science, one part intrigue and two parts fun, served nicely within the beautiful atmosphere of ECHO Lake Aquarium and Science Center. Socialize among the fish, frogs, turtles and other wildlife while engaging in hot topics of the day. ECHO AfterDark events are designed to engage our dynamic and growing adult audience.

All proceeds benefit ECHO Open Door educational access program.

All ECHO AfterDark events are 21+ unless otherwise noted. For more information email afterdark@echovermont.org.

ECHO AFTERDARK SCHEDULE 

Pop-up Gastronomy Series
Food and wine are the first markers of culture - belief and geography made manifest on a plate and in a glass. Join us as we celebrate food, wine, eating and drinking in our hyper-regional series: Pop-Up Gastronomy on the Waterfront. Our chefs and sommeliers will present you with multi-course food, wine and beer dinners and brief discussions of the influence of each region on their work. The seatings at each of these events will be limited to 100 people. Tickets are $65 for ECHO Members, $75 for Non-members. If last year’s very popular series is any indication, they’ll sell out fast.

Pop-Up Gastronomy: The Asado - Argentine Open Fire Cooking
The sights, smells and flavors of Argentine open fire cooking have inspired a generation of American chefs to explore the food, drink and atmosphere of the Asado. This will be an evening of blazing hot coals, spit roasted meats and high altitude wines served family style. Join us for the mouthwatering opener of our Pop-Up Gastronomy Series. Menu

Pop-Up Gastronomy: The Great Furnace - Sicilian Food and Wine
Mongibello, Etna, the Great Furnace - if you want to truly know the food and wine of Sicily, you have to come to terms with the awesome presence of the great volcano. We’ll drink rare wines made from grapes plucked from the lava flows, and eat food inspired by the bounty of those fertile volcanic soils and great blue Mediterranean sea.

Pop-Up Gastronomy:Confluence - New England Bounty/Continental Influence
The focal point of a great and enduring immigration of peoples and cultures, New England enjoys an extraordinary culinary landscape that both acknowledges it’s history and forges a unique identity of its own. This multi-course dinner is an exploration of our regional bounty - the meat, seafood, cheeses and vegetables found throughout New England - through the lens of the cultures that have shaped this part of the country.

Pop-Up Gastronomy: The Strict Observance - Trappist Beers at the Table
Great beer is one of the few remnants of the Strict Observance - the rules that once governed the lives of the monks of the Trappist Order.  The French Revolution and two world wars have taken their toll - only 10 officially recognized Trappiste breweries are active in the world today. This multi-course dinner will pair many of their extraordinary beers with the distinctive national cuisine of Belgium.
